Instrucciones
1
In a medium mixing bowl, whisk together the Greek yogurt, olive oil, lemon juice, lemon zest, minced garlic, oregano, cumin, paprika, salt, and black pepper until fully emulsified.
💡
Consejo:Whisking thoroughly distributes the lactic acid evenly, ensuring consistent tenderization.
2
Add the chicken thighs to the bowl, tossing until every piece is evenly coated in the marinade. Cover tightly and refrigerate for at least 30 minutes, or up to 8 hours.
💡
Consejo:Do not marinate longer than 12 hours, as the citrus can alter the meat's texture.
3
Preheat your oven to 218 °C (220 °C) and line a rimmed baking sheet with parchment paper or foil lightly greased with olive oil.
💡
Consejo:A hot oven guarantees caramelization without drying out the chicken.
4
Transfer the chicken onto the prepared baking sheet in a single layer, shaking off excess marinade while keeping a light coating intact.
💡
Consejo:Leave ample space between pieces to promote roasting rather than steaming.
5
Bake for 20 to 25 minutes, or until the internal temperature reaches 74 °C (74 °C) at the thickest part and edges show deep golden char.
💡
Consejo:Switch on the broiler for the final 2 minutes for extra charred edges.
6
Remove from the oven and allow the chicken to rest for 5 minutes before slicing and serving.
💡
Consejo:Resting locks the moisture back into the fibers.
