說明
1
Preheat your oven to 204 °C (200 °C). Generously butter and lightly flour four (6-ounce) ramekins. Place them on a baking sheet.
💡
提示:Using a pastry brush ensures even buttering of the ramekins.
2
In a heatproof bowl set over a saucepan of simmering water (double boiler), melt the butter and chopped chocolate together, stirring until smooth.
💡
提示:Ensure the bottom of the bowl does not touch the water to prevent scorching the chocolate.
3
Remove the bowl from the heat. Whisk in the granulated sugar until fully incorporated.
💡
提示:Allow the chocolate mixture to cool slightly before adding the eggs to avoid scrambling them.
4
In a separate small bowl, whisk together the eggs, egg yolks, vanilla extract, and salt.
💡
提示:Vigorously whisking the eggs will help create a lighter batter.
5
Gradually whisk the egg mixture into the chocolate mixture until well combined.
💡
提示:Pour the egg mixture in a slow, steady stream while continuously whisking the chocolate.
6
Gently fold in the flour until just combined. Do not overmix.
💡
提示:Overmixing will develop gluten, resulting in a tougher cake.
7
Divide the batter evenly among the prepared ramekins.
💡
提示:Filling the ramekins about two-thirds full is ideal.
8
Bake for 12-14 minutes, or until the edges are set but the center is still soft.
💡
提示:A slight jiggle in the center is what you're looking for; it should not look liquid.
9
Let the cakes cool in the ramekins for 1 minute. Carefully invert each ramekin onto a serving plate. Serve immediately.
💡
提示:If a cake sticks, run a thin knife around the edge before inverting.
