說明
1
Preheat your oven to 350 degrees F (175 degrees C) and line an 8.5x4.5-inch loaf pan with parchment paper, leaving tabs hanging over the sides.
💡
提示:Parchment handles allow effortless removal without greasing the pan.
2
Place the 2 bananas in a wide mixing bowl and mash them with a fork until smooth with only fine flecks remaining.
💡
提示:The more speckled the peels, the higher the natural sugar content.
3
Add the eggs, Greek yogurt, maple syrup, and vanilla extract to the mashed bananas, then whisk vigorously until completely emulsified.
4
In a separate bowl, whisk together the flour, baking powder, cinnamon, and fine sea salt to evenly disperse the leavening agent.
💡
提示:Uniform mixing of the baking powder prevents uneven rising during baking.
5
Gently fold the dry ingredients into the wet banana mixture using a silicone spatula just until dry flour pockets disappear.
💡
提示:Avoid vigorous stirring; overmixing activates gluten and creates a rubbery crumb in low-fat bakes.
6
Pour the batter into your lined loaf pan, spreading it into the corners and lightly smoothing the surface.
7
Bake on the center rack for 45 to 50 minutes, or until the crust turns golden brown and a skewer inserted in the center comes out clean.
💡
提示:If the loaf browns rapidly near minute 35, drape a loose tent of foil over the top.
8
Rest the loaf in the pan for 10 minutes, then lift it out using the parchment overhang and transfer to a wire rack to cool fully before slicing.
💡
提示:Allowing oil-free bread to cool completely sets the interior structure for clean cuts.
