說明
1
Preheat your oven to 204 °C (200 °C) and lightly grease a large roasting pan with olive oil or non-stick spray.
💡
提示:Using a glass or ceramic baking dish often makes cleanup easier than metal pans.
2
In a large mixing bowl, whisk together the olive oil, lemon juice, water (or stock), minced garlic, oregano, salt, and pepper until well combined.
💡
提示:Use fresh garlic rather than jarred for a much deeper, aromatic flavor profile.
3
Place the potato wedges into the roasting pan and pour the liquid mixture over them. Toss thoroughly with your hands to ensure every wedge is well coated.
💡
提示:Ensure the potatoes are arranged in a single layer so they roast rather than steam.
4
Cover the pan with foil and bake for 45 minutes, then remove the foil and continue roasting for another 30-45 minutes, stirring occasionally, until the liquid has reduced to a syrupy glaze and the potatoes are deeply golden brown.
💡
提示:If the pan becomes too dry, add a splash more stock to keep the potatoes succulent.
