A delightful summer twist on the classic Italian Caprese. Juicy, sweet peaches are wrapped in smoky bacon, grilled to crispy perfection, and served alongside fresh mozzarella, basil, and a rich balsamic reduction.

说明
1
Preheat your outdoor grill or indoor grill pan to medium-high heat. Lightly oil the grates to prevent sticking.
💡
提示:Ensure the grates are clean so the bacon doesn't tear when flipping.
2
Wrap each peach wedge tightly with a half-slice of bacon. Secure the bacon wrap with a toothpick if necessary, ensuring the seam is tucked neatly underneath.
💡
提示:Using room-temperature bacon makes wrapping easier as it stretches slightly better.
3
Place the wrapped peach wedges on the hot grill. Cook for 2 to 3 minutes per side, turning carefully with tongs, until the bacon is crispy and golden brown on all sides and the peaches are slightly softened.
💡
提示:Watch for flare-ups from the dripping bacon grease; move peaches to a cooler zone of the grill if needed.
4
Arrange the fresh mozzarella slices and fresh basil leaves on a large serving platter. Nest out the warm, grilled bacon-wrapped peaches among the cheese and herbs.
💡
提示:To make it look beautiful, alternate cheese slices, basil, and peach wedges across the plate.
5
Drizzle the extra virgin olive oil and balsamic glaze over the entire platter. Finish by sprinkling flaky sea salt and freshly cracked black pepper.
💡
提示:Serve immediately while the peaches are still warm and the bacon is crunchy.
📝厨师备注
For a sweet-and-savory upgrade, brush the bacon-wrapped peaches with a touch of maple syrup or honey during the last minute of grilling. Leftovers do not store well because of the fresh mozzarella condensation, so enjoy this dish fresh!
