说明

In a medium bowl or jar, combine chia seeds, coconut milk, maple syrup, and vanilla extract. Whisk vigorously to ensure no clumps form.

💡

提示:Using a jar with a tight-fitting lid allows you to shake the ingredients together for even better distribution.

Let the mixture sit for 5 minutes, then whisk or shake again to break up any seeds that have settled. This second stir is crucial for a smooth pudding texture.

💡

提示:Don't skip this step! It prevents the chia seeds from clumping at the bottom.

Cover the bowl or seal the jar and refrigerate for at least 2-3 hours, or preferably overnight, until the pudding has thickened to a creamy consistency.

💡

提示:The longer it chills, the thicker and more pudding-like it will become.

While the pudding chills, prepare the mango. Peel and dice one ripe mango. In a small bowl, gently toss the diced mango with lime juice.

💡

提示:The lime juice brightens the mango flavor and adds a subtle tang.

To assemble, spoon a layer of the thickened chia pudding into serving glasses or bowls. Top with a generous layer of the lime-kissed mango.

💡

提示:Use clear glasses to showcase the beautiful layers.

Sprinkle the shredded coconut and chopped pistachios over the mango layer. Repeat layers if desired, finishing with a sprinkle of toppings.

💡

提示:For added sweetness, you can drizzle a little extra maple syrup over the top.
