Instruksi
1
Pat the chicken dry and pound to a uniform thickness, then toss with the paprika, oregano, salt, and pepper until evenly coated.
💡
Tip:Uniform thickness ensures the chicken cooks at the same rate for a perfect texture.
2
Heat two tablespoons of the ghee in a heavy-bottomed skillet over medium-high heat and sear the chicken until golden brown and cooked through, approximately 5-6 minutes per side.
💡
Tip:Don't rush the searing process; the dark spice crust is essential for deep flavor.
3
Remove chicken from the pan and set aside to rest. Add the remaining ghee and shallots to the skillet, sautéing until translucent.
💡
Tip:Use a wooden spoon to gently release the browned bits from the bottom of the pan.
4
Lower the heat, pour in the heavy cream and thyme, and simmer for 3-4 minutes until the liquid reduces into a thick, glossy coating.
💡
Tip:The sauce should coat the back of a spoon when it reaches the ideal consistency.
5
Return the chicken to the pan to coat with the sauce, then serve immediately.
💡
Tip:This pairs beautifully with roasted asparagus or buttery mashed potatoes.
