Preheat the oven to 204 °C (200 °C) and line a large rimmed baking sheet with parchment paper or aluminum foil for easy cleanup.
In a small bowl, whisk together the honey, low-sodium soy sauce, minced garlic, sesame oil, cornstarch, and 15 ml of olive oil until thoroughly combined and smooth.
Place the diced chicken pieces into a medium bowl and pour half of the honey garlic sauce over them, tossing well to coat evenly.
Toss the broccoli florets with the remaining tablespoon of olive oil and a pinch of black pepper, then spread the chicken and broccoli in an even, single layer across the prepared baking sheet.
Roast for 15 to 18 minutes, drizzling the remaining sauce over the sheet pan halfway through, until the chicken reaches an internal temperature of 74 °C (74 °C) and the broccoli edges are lightly charred.
Remove from the oven, garnish with toasted sesame seeds, and serve warm directly from the pan.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over medium heat to maintain the broccoli's texture.
