Ingredients
- ✓0.7 kg boneless skinless chicken breasts
- ✓45 ml cornstarch
- ✓1 tsp garlic powder
- ✓0.5 tsp smoked paprika
- ✓0.5 tsp kosher salt
- ✓0.3 tsp black pepper
- ✓30 ml avocado oil
- ✓120 ml mayonnaise
- ✓60 ml sweet chili sauce
- ✓22.5 ml sriracha
- ✓15 ml honey
- ✓1 tsp rice vinegar
- ✓720 ml cooked jasmine rice
- ✓240 ml English cucumber
- ✓240 ml shredded red cabbage
- ✓120 ml shelled edamame
- ✓2 stalks green onions
- ✓15 ml toasted sesame seeds
Instructions
1
Whisk mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar in a medium bowl until thoroughly combined and creamy. Set aside half of the sauce in a small dish for drizzling later.
💡
Tip:Taste test the sauce now; add an extra splash of sriracha for more spice or a drop of honey for extra sweetness.
2
Thoroughly pat the diced chicken dry with paper towels. Place in a mixing bowl and toss with cornstarch, garlic powder, smoked paprika, salt, and black pepper until each piece is lightly and evenly coated.
💡
Tip:Removing surface moisture from the chicken is critical to getting a crisp crust.
3
Heat 15 ml of avocado oil in a large skillet over medium-high heat. Add half of the chicken pieces in a single layer, ensuring they do not overlap. Cook for 6 to 8 minutes, turning occasionally, until golden brown, crispy, and cooked to an internal temperature of 74 °C (74 °C). Transfer to a plate and repeat with the remaining oil and chicken.
💡
Tip:Avoid crowding the skillet so the chicken sears crisp instead of steaming.
4
Transfer all warm cooked chicken to a clean bowl, pour over the initial half of the prepared bang bang sauce, and toss quickly so every piece is evenly glazed.
💡
Tip:Toss right before assembling the bowls to preserve maximum crunch.
5
Assemble the bowls by spooning warm jasmine rice into four serving bowls. Arrange the sauced chicken, sliced cucumber, shredded red cabbage, and edamame side by side over the rice.
💡
Tip:Contrasting warm chicken and rice with cold, crisp vegetables creates great texture.
6
Drizzle the reserved bang bang sauce over the top of each bowl and finish with a sprinkle of sliced green onions and toasted sesame seeds.
💡
Tip:Serve immediately while the chicken coating is at peak crispiness.
📝 Chef's Notes
For meal prep, store the cooked chicken, vegetables, rice, and sauce in separate airtight containers in the refrigerator for up to 4 days. Reheat the chicken in an air fryer at 375°F (190°C) for 3 to 4 minutes to restore its crispy coating before saucing.
