Preheat your oven to 200 °C (204 °C) and line a large baking sheet with parchment paper.
Unroll the puff pastry sheet onto the prepared baking sheet, prick the surface thoroughly with a fork, sprinkle evenly with granulated sugar, and bake for 18 to 20 minutes until deeply golden and crisp.
Remove the pastry from the oven and allow it to cool completely on a wire rack, then gently slice it into three equal rectangular slabs using a serrated bread knife.
In a chilled mixing bowl, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract on medium-high speed until thick, smooth, and holds pipeable peaks.
In a shallow dish, stir together the cooled espresso and optional coffee liqueur.
Place the bottom pastry layer on a serving board, brush lightly with the coffee mixture, pipe or spread half of the mascarpone cream across it, and dust lightly with cocoa powder.
Set the second pastry rectangle on top, brush lightly with coffee, pipe the remaining cream over it, top with the final pastry sheet, and dust generously with cocoa powder before slicing.
Best served within 2 hours of assembly for optimal crunch, though chilling up to 6 hours yields a softer, more traditional cake-like bite.
