Toss the cubed extra-firm tofu with cornstarch in a bowl until evenly coated.

Heat 15 ml of neutral oil in a large skillet or wok over medium-high heat. Add the tofu and pan-fry until golden brown and crispy on all sides, about 8-10 minutes. Transfer the tofu to a plate lined with paper towels and set aside.
In the same skillet, add the remaining tablespoon of oil. Add the diced onion and cook over medium heat for 4-5 minutes until softened and translucent.
Stir in the minced garlic, grated ginger, curry powder, turmeric, and cumin. Sauté for about 1 minute until fragrant.
