Instructions
1
Preheat your oven to 204 °C (200 °C). Pierce the potatoes several times with a fork and bake directly on the oven rack for 50-60 minutes, or until tender when pierced with a knife.
💡
Tip:For quicker baking, you can microwave the potatoes for 5-7 minutes before transferring them to the oven.
2
Once baked, carefully slice each potato in half lengthwise. Gently scoop out the flesh into a large bowl, leaving about a 1/4-inch border around the skin to create a vessel.
💡
Tip:Be careful not to tear the potato skins; they will be used to hold the filling.
3
Add the butter, milk (or cream), half of the shredded cheddar cheese, salt, and pepper to the scooped potato flesh. Mash until smooth and creamy.
💡
Tip:Warm the milk slightly before adding to help create a smoother texture.
4
Stir in the crumbled bacon and half of the chives (or green onions) into the mashed potato mixture.
💡
Tip:Reserve some bacon and chives for garnish.
5
Spoon the potato mixture back into the reserved potato skins, mounding it slightly.
💡
Tip:Ensure an even distribution of the filling.
6
Top the filled potato halves generously with the remaining shredded cheddar cheese.
💡
Tip:A final sprinkle of cheese ensures a lovely golden crust.
7
Place the loaded potato halves on a baking sheet and return to the oven for 10-15 minutes, or until the cheese is melted and bubbly and the edges are lightly golden.
💡
Tip:Broiling for the last minute can enhance browning, but watch carefully to prevent burning.
8
Garnish with the reserved bacon, chives (or green onions), and serve immediately with a dollop of sour cream or Greek yogurt.
💡
Tip:Serve with your favorite hot sauce or a side salad for a complete meal.
